TRY THIS BRAISED CHICKEN WITH MANDARIN ORANGES

Like every Chinese New Year, you will find an abundance of mandarin oranges in the market. You may even have a basket full at home not being eaten. Avoid wastage and turn those mandarin oranges into a delectable dish for the family. Add them to salads to give your veggies a boost of citrus. Not only will adding mandarin oranges to your dish make it healthier but it surely can add sweetness to savoury recipes too.

But if you’re in the mood for something a little bit filling, try-out Chef Anis Nabilah’s Oven Braised Chicken with Mandarin Oranges below!

Ingredients:

8 to 10 pieces chicken, thighs and drumsticks
15 garlic cloves, chopped
1 inch ginger, julienne
6 shallots, chopped
2 stalks spring onion, sliced
¼  cup sesame oil
¼ cup soy sauce
¼ cup sweet soy sauce
2 tablespoon honey
10 dried chillies, coarsely chopped
½ tablespoon Szechuan pepper
1  homemade cup chicken stock
Coarse white pepper
1 whole mandarin orange, segmented (you can use up to 2 oranges depends on the sweetness)
Vegetable oil
Coriander and spring onion

 

Method:

Heat vegetable oil in a cast iron pot (dutch oven) and sauté garlic, ginger and shallots till fragrant.

Add chicken and cook for 5 minutes.

Add stock, soy sauce, sweet soy sauce, dried chillies, mandarin oranges, sesame oil, salt and pepper.

Let it simmer for 10 minutes, cover pot and put it in a preheated oven at 180 degrees Celsius and cook chicken for 35 minutes.

Garnish with spring onions and coriander. Serve with steamed fragrant rice.
